Here are the recipes we chose this week:
Recipe 1 – Spicy Thai Beef Curry (from Tenina)
*sorry – we didn’t take a picture of this one! It got eaten before a picture was thought of!*
This has become one of our favourite curries since it was made for us by friends when Polly was born. It is so delicious and the peanuts give it an awesome crunch factor. The method really couldn’t be easier. Serve it with rice and this really goes a long way.
Recipe 2 – Coconut Lamb Curry (from Alyce Alexandra)
This is a mild curry and the lamb absolutely melts in your mouth. The sauce is made in the Thermomix, and the lamb (all 2kg of it!) is then cooked in the oven for 3 hours. So, it’s not a quick meal to throw together at the last minute… but it’s certainly not labour-intensive! Next time we will either grind the coriander seeds for longer, or use ground coriander.
Recipe 3 – Thermomix Lasagne (from The 4 Blades)
We use our popular bolognese recipe (The ‘Motherlode’ of Bolognese) with our new Thermomix Bechamel Sauce recipe to bring you an enormous family-sized lasagne that you can have ready from scratch in about 2 hours. There are gluten and dairy free options for this one too!
Recipe 4 – Frozen Garlic Bread (from The Road to Loving My Thermo Mixer)
We are yet to come across someone who genuinely doesn’t like the garlic bread that comes in the foil. Oh boy… this is a step above! You make the bread, and then the garlic butter. The great news is that it makes enough garlic butter to warrant making a second (or third, depending on how much you use!) batch of dough. We didn’t freeze these ahead of time, but we think it’s a great idea! Another idea… have some frozen pizza dough on hand, and some garlic butter in the fridge to make some delicious garlic pizzas at the last minute!
