Here are the recipes we chose this week:
Recipe 1 – Chorizo, Cumin & Tomato Rice / Cajun Dirty Rice (from the Recipe Community)
Thanks to our friend Ant for pointing out this quick Thermomix meal to us! It is delicious just as it is – a great blend of flavours and super easy to get on the table pronto. As Joe says, halfway between a paella and a risotto.
Recipe 2 – Chicken & Creamy Mustard Pasta (from the Recipe Community)
Our friend Mon shared this quick Thermomix meal with us! The original recipe calls for normal pasta and cream. We substituted with coconut cream (worked a treat – no coconutty taste!) and GF pasta. We put the pasta in for 15 minutes instead of the 20 minutes recommended for normal pasta. It was still far too long. Next time (and there will be a next time!) we will try for 10 minutes to avoid gluggy GF pasta. We substituted some of the wholegrain mustard for dijon due to availability – great taste! You could easily add more veggies to this – either more frozen vegetables, more spinach, some sundries tomatoes, capsicum… things that are easily added at the end.
Recipe 3 – Garlic Prawns (from MTR – My Thermie Rules)
This quick Thermomix meal comes from Carmen! Another quick yummy meal. We actually made this twice (you can listen to why in the podcast!) and the second time we added chopped up zucchini and capsicum which added a bit of colour. We used frozen prawns because that’s what we had on hand. You need to cook for a bit longer if you are going to use frozen prawns. This was made into a full meal in less than 30 minutes by adding the rice cooking step beforehand. (See tips below)
Here are some cool tips from this podcast…
– Did you know you can cook rice in your Thermoserver? Here’s how:
Wash and rinse 250g of white rice until the water runs clear. Add it to your TM bowl with 500g boiling water.
Set 6 minutes / Varoma / Speed 1.
Pour the mixture into the Thermoserver. Leave for at least 25 minutes while something else is cooking.
Put rice into rice basket or strainer and rinse with hot water until clear.
Transfer back to Thermoserver.
– Want to leave the MC off to let steam out without getting spatter all over the place? Sit the rice basket on the lid of your TM.
