In Episode 59, we bring you more Simple Summer Thermomix Salads. Simple and delicious, these thermomix salad recipes are great to have on hand over summer. A ‘follow up’ from Episode 27 last year!

We made two versions of this salad – one with sour cream and one without (for Bec). We made our own mayo using the Cheat’s Mayonnaise recipe. It is a really delicious blend of flavours and while you can happily eat it freshly made, we think Peta’s advice of letting it sit overnight and serving cold the next day makes it even more yummy. You can even make this recipe without a Thermomix!

Carrot & Cashew Salad

This is such an easy and tasty salad to make. Throw in all the ingredients and chop on Speed 5 for 5 seconds. Done. Joe describes the texture of this salad like a ‘carrot pesto’. It’s a great accompaniment to a BBQ meal. We didn’t have any Inca Inchi oil so we used macadamia oil.

A huge thanks to Sarah for bringing our attention to this delicious salad. You wouldn’t believe how quickly Bec demolished then entire thing! Such a yummy ‘cheese and bacon taste’. The instructions are really straight forward. Even if you weren’t a fan of sprouts, you may like this recipe! It has a ‘coleslaw’ feel to it. We did the final chopping on Speed 5-6 as we didn’t core the brussel sprouts so it needed a bit more power.
