Now that both Joe and Bec are out at work every day (Joe used to work from home while studying), we’ve had to make more of an effort to have food on hand to make eating nutritious food easier. Even with a fridge full of fresh veggies and a Thermomix, if you’re rushing out the door, the yummy healthy food doesn’t just make itself. Some degree of planning really sets you up for success (and taking your own lunch is much cheaper!)
This Thermomix meal planning has really helped us out. Our new template for each week is to make one dip, one salad, one soup and one finger food to have in the fridge, at the ready. This gives us options for lunches, or snacks before dinner. This has been perfect for our two-person family. Please adjust as appropriate to your family size.
So, the recipes that we used for this week were:
The Finger Food – Sweet Potato Tuna Patties (The 4 Blades)
These were featured in last week’s ‘4 Ingredients’ episode. Great to make ahead of time to eat on the go, or to suit lunchboxes.
Other ideas: Easy Mini Frittatas, Really Easy Rissoles, Little Hummingbird Cakes, or ideas from our Lunchbox Ideas episode.
The Dip – Moroccan Roast Carrot Dip (The 4 Blades)
Oh boy! Bec’s new favourite dip of all time. This is absolutely delicious and while an oven is used for the roasting, the Thermomix makes this an easy dip option.
The Salad – Nutty Tuna Salad (The 4 Blades)
Way to get some great super foods into your diet with ease. Kale and other yummy veggies, with the great protein source of tuna. Utilising the tips from Episode 27 – Simple Summer Salads.
Other ideas: Bec’s Super Simple Salad
The Soup – Creamy Spinach Soup (The 4 Blades)
This is a really simple ‘everyday’ soup giving you a healthy serve of zucchini and spinach, with the good fat from the coconut milk to keep you full.
