Quick Chickpea and Cauliflower Curry

Description

Who doesn’t love a curry? Unfortunately, a good curry often takes hours and hours of preparation and cooking. In the recipe below we will show you how you can make a delicious vegetarian curry in under 30 minutes and have it so full of flavour you will be raving about it to your friends.

Ingredients

  • garlic cloves – 2, peeled
  • onion – 1, peeled and quartered
  • coconut oil – 20g
  • curry powder – 3 tsp
  • turmeric – 1/2 tsp
  • garam masala – 1 tsp
  • tomato – 200g, diced
  • coconut milk – 200g
  • chickpeas – 400g tin, drained
  • cauliflower – 340g, florets, small
  • rice – steamed, to serve
  • naan – to serve (make your own with the Naan Bread or Gluten Free Naan recipes from The Celebrations Issue)

Instructions

Place garlic cloves (2) and onion (1) into the bowl. Chop Speed 7 / 3 seconds. Scrape down sides.
Add coconut oil (20g), curry powder (3 tsp), turmeric (1/2 tsp) and garam masala (1 tsp) to the bowl. Program 5 minutes / 110C* / Speed 2.
Add tomatoes (200g) and coconut milk (200g) to the bowl.
Add the chickpeas (400g tin) and cauliflower (340g) to the internal steaming basket. Set the basket in place. Program 18 minutes / 100C / Speed 2, measuring cap on.
Once finished cooking, remove the internal steaming basket with the machine’s spatula. Pour chickpeas and cauliflower into a serving dish, then pour sauce over the top. Mix to combine.
Serve with rice and naan bread.
*If your machine does not go above 100C, set to Steaming Temperature which is usually between 110-115C. Please refer to your user manual for correct information for the appropriate setting for your machine.
