
Mini Peach Crumble Cakes

Description
When in season, peaches are deliciously sweet and flavoursome. They are perfect on their own, but we also love them in these delicious little cakes. If peaches are not in season, you can simply use the same quantity of tinned peach slices.

Ingredients
Crumble topping:
- plain flour – 40g
- brown sugar – 50g
- butter – 40g
- cinnamon – 1 tsp, ground
Cake batter:
- peaches – 4, stones removed and peeled
- butter – 120g, softened
- sugar – 100g
- vanilla – 2 tsp, extract
- cinnamon – 1 tsp, ground
- self raising flour – 360g
- salt – 1/2 tsp
- eggs – 2
- milk – 100g
- peaches – 2, stones removed, peeled and finely diced
Instructions
Crumble:
- Preheat oven to 180C. Line a muffin tin with paper cases.
- Add the plain flour (40g), sugar (50g), butter (40g) and cinnamon (1 tsp) to the bowl. Blitz Closed Lid / Turbo / 1 x 2 second blast. Scrape down sides.
- Repeat Closed Lid / Turbo / 1 x 2 second blast, or until a crumble consistency has been reached. Set aside.
Cake batter:
- Without washing the bowl, add the whole peaches (4 only) to the bowl. Chop Speed 8 / 10 seconds. Scrape down sides.
- Add butter (120g), sugar (100g), vanilla (2 tsp), cinnamon (1 tsp), self raising flour (360g), salt (1/2 tsp), eggs (2) and milk (100g) to the bowl. Mix on Speed 5 until just mixed.
- Add the diced peaches (2) to the bowl. Mix gently with a spatula to combine.
- Spoon the mixture into cases until they are 3/4 full.
- Sprinkle the crumble mixture over each cake.
- Bake for 20 minutes or until cooked through.
- Serve warm.
