Mini Donuts with Passionfruit Icing

Ingredients

  • milk – 100g
  • butter – 30g
  • egg – 1
  • yeast – 2 tsp, dried, or 7g sachet
  • plain flour – 340g
  • caster sugar – 40g
  • passionfruit – 50g, pulp

Icing:

  • icing sugar – 100g
  • passionfruit – 50g, pulp

Instructions

  1. If you need to make your own caster sugar, add sugar (40g) to the bowl and grind Speed 9 / 3 seconds. Set aside.
  2. Add the milk (100g) and butter (30g) to the bowl. Program 1:30 minutes / 37C / Speed 1.
  3. Add the egg (1) to the bowl. Mix Speed 4 / 5 seconds.
  4. Add the yeast (2 tsp), plain flour (340g), caster sugar (40g) and passionfruit pulp (50g) to the bowl. Mix Speed 6 / 6 seconds.
  5. Program 3 minutes / Closed Lid / Kneading Function.
  6. Move the dough to an oiled bowl and cover with clingfilm. Allow to rest for 1 hour.
  7. Roll the dough out to 1cm thick. Use a 4.5cm round cookie cutter to cut the donuts, and a smaller 2cm cutter to cut out the middles. Roll out the leftover dough to continue making more donuts.
  8. Let the donuts sit on a baking tray lined with baking paper for 30 minutes.
  9. While the donuts are sitting, preheat the oven to 180C or 160C fan forced.
  10. Bake for about 10 minutes, until the donuts are a light golden colour.
  11. Remove from oven and allow to cool on a wire rack. Meanwhile, start making the icing.

Icing:

  1. If you need to make your own icing sugar, add sugar (100g) to the bowl and grind Speed 9 / 10 seconds.
  2. To the icing sugar (100g), add the passionfruit pulp (50g). Program 1:30 minutes / 60C / Speed 1 until combined and warm. Pour into a shallow dish.
  3. Dip the donuts into the icing and set them back on the tray. If the icing mixture becomes too stiff, just warm it up in the microwave for about 10 seconds.
  4. Enjoy!
