Kids Thermomix Ice Cream Cake

Not only is this Thermomix ice cream pie impressive and delicious, it’s super easy too. It’s like a Thermomix Ice Cream cake but with a delicious crunchy crust made with chocolate and rice bubbles which makes it easier to handle.

The filling is ice cream mixed with maltesers which complements the crust beautifully. This recipe is a real winner and is sure to impress anyone you serve it to. This recipe was featured in episode 147 of the 4 Blades podcast as the dessert for the kids dinner party, put together by our nephew Sam.

Malteser Ice Cream Pie

Ingredients

Rice Bubble Base

  • 200g cooking chocolate
  • 140g puffed rice cereal (like Rice Bubbles)

Ice Cream Filling

  • 140g Maltesers
  • 1l vanilla ice cream

Directions

Ice Cream Filling
Step 1
Leave the ice cream (1L) sitting out of the freezer.
Rice Bubble Base
Step 2
Line the bottom of the springform pan with baking paper and grease the sides.
Step 3
Add chocolate (200g) to the bowl. Blitz Speed 7 / 8 seconds. Scrape down sides.
Step 4
Program 2:30 minutes / 50C / Speed 2.5. Scrape down sides and blades.
Step 5
Program 1:30 minutes / 50C / Speed 2.5.
Step 6
Add puffed rice (140g) to the bowl. Combine Reverse+Speed 3 / 20 seconds. If necessary, combine any remaining bits not covered in chocolate by mixing with a spatula.
Step 7
Tip the mixture into the prepared pan. Using wet hands, push the mixture up the sides and into the base until it is all covered.
Step 8
Transfer to the freezer.
Ice Cream Filling
Step 9
Add Maltesers (140g) to bowl and process Speed 5 / 2-3 seconds.
Step 10
Add the softened ice cream (1L) to the bowl. Combine on Reverse+Speed 3 for about 1 minute, with the help of your machine’s spatula. Continue until it is well combined.

Assembly
Step 11
Spoon into the frozen base, making sure that you don’t add the ice cream in higher than the sides.
Step 12
Return to the freezer until firm (3-4 hours, or overnight).
Serving
Step 13
Remove from the freezer 10 minutes before serving.
Step 14
Slice and serve.
