
Grilled Peaches with Coconut Cream and Almond Crumble

Description
It doesn’t get more delicious than warm fruit and crumble. Here we share a healthy twist on fruit crumble – it is kind of like a deconstructed peach crumble in fact!

Ingredients
Crumble:
- almonds – 100g, slivered, or seeds of choice
- coconut flour – 1 Tbsp
- coconut oil – 2 Tbsp
- honey – 1 tsp
- vanilla – 1 tsp, extract
- cinnamon – pinch
Peaches:
- coconut cream – 400ml, in the refrigerator for 24 hours prior
- honey – 1 tsp
- vanilla – 1 tsp, extract
- peaches – 2, halved and stone removed
Instructions
Crumble:
- Preheat oven to 180C. Line a small baking tray with paper.
- Place almonds (100g), coconut flour (1 Tbsp), coconut oil (2 Tbsp), honey (1 tsp), vanilla (1 tsp) and cinnamon (pinch) into mixer bowl. Speed 4 / 5 seconds.
- Place crumble onto baking tray. Bake for 5-10 minutes until golden. Allow to cool slightly.
Peaches:
- Clean the bowl. Add whisk attachment.
- Add coconut cream (400ml) from the tin to the bowl. Do not add the water layer. You just want the luscious thick cream that sits on top.
- Add the honey (1 tsp) and vanilla (1 tsp) to the cream. Program 1 minute / Speed 3.5, taking approximately 10 seconds to reach Speed 3.5.
- Transfer the cream to a serving dish and refrigerate until required.
- Grill peaches (4 halves) on a grill plate or BBQ until soft and warmed through.
- Top with a dollop of coconut cream and a sprinkling of crumble. You may like to drizzle some extra honey over the top.
