Oh what a WIN it was to discover that our beloved Thermomix could also make ice-cream! Dairy-free ice-cream that actually tastes like ice-cream!!!
Firstly… freeze coconut milk in ice cube trays. We just used coconut milk that we had made at home (check out Episode 5 of the podcast for the recipe).
Here is the recipe that would serve one person (multiply as necessary!):
30g xylitol / rapadura / sugar (your sweetener of choice)
5g chia seeds
Grind 45 seconds, Speed 9. Use spatula to release any of the ground-up powder from the corners of the Thermomix bowl.
100g frozen coconut milk (in cubes)
10g cacao powder
Grind 20 seconds, Speed 9. Use spatula again as above
20g roughly chopped nuts (we use cashew pieces)
30g avocado
Mix 10 seconds, Speed 6. Use spatula again, to make sure everything is completely blended.
DONE! It’s that easy. And so yum… Let us know what you think!

Thanks for the inspiration – rather than sweetener we used frozen bananas x2 – amazing! also increased the cacao by 5g as I am a chocolate head and used natural peanut butter 🙂 nom nom nom!
