Egg Free Mayonnaise in your Thermomix is SO EASY!
Recently we got into the kitchen for some experimenting. It was all about using aquafaba. Aqua… what? Aquafaba is the liquid that you typically tip down the drain when you open a can of chick peas, or other beans. It acts a lot like egg whites, so you are able to do all sorts of things with it that is hard to do without eggs. We talk all about it in Episode 97 of the podcast.
Our first experiment was to make an egg free mayonnaise in the Thermomix, using aquafaba. Wow. This is so quick and easy, you actually won’t believe it. The taste and consistency of the mayonnaise was just like standard mayonnaise. If you gave it to a friend without telling them, they would have no idea that it was actually egg free mayonnaise. It went well with coleslaw, however we did notice that it was a little more watery on the coleslaw after about 24 hours, in comparison with standard mayonnaise.
We based the method for this egg free mayonnaise on our favourite Thermomix mayonnaise method – the Cheat’s Mayonnaise by Homemade, Healthy, Happy. We featured it in Episode 27 of the podcast: Simple Summer Thermomix Salads.
So give this recipe a shot, even for the sake of an experiment. It’s awesome to use something like aquafaba that you would otherwise be tossing down the drain. The other great thing about it is that it doesn’t have raw egg, so it’s a great option if you are pregnant, or if you find that you are tossing homemade mayonnaise out after a few days due to the risk of food poisoning.
Keep it in a sterilised jar in the fridge. This recipe makes about a cup of mayonnaise.
