These Thermomix Salads are Delicious!
Looking for some super summer Thermomix salads to impress? In Episode 92, we share three delicious summer salads that we think you will love!

The recipes we chose this week are:
Recipe 1 – Peanut Butter Coleslaw (from Dani Valent)
Firstly, we tried making peanut butter with Dani’s super simple advice of ‘throw in the best roasted / unsalted peanuts you can find with some salt, 1 minute / Speed 10”. See the pics below for the results. We used 250g of peanuts. The peanut butter is super simple, and gives a smooth paste. You’ll find that it’s a great non-oily option for peanut butter. Based on supermarket prices it’s more expensive to make your own, likely due to the lack of fillers.
We found that the key point in this recipe is to make sure the cabbage is in large chunks, as opposed to longer ribbon-like pieces. If you get the cut of the cabbage right, it’s a real winner of a salad. The flavours are fresh and fabulous with the lime juice, ginger, mirin (we used rice wine vinegar) and peanut butter.
If you are making the salad for entertaining you may wish to make two batches so that it spreads out nicely on a plate. The image above is in a container with a 20cm diameter, so that will give you an indication of how much it makes.
Recipe 2 – Red Pesto Chicken Salad (from Skinnymixers)
Firstly, make the red pesto that you will find here. You’ll have some leftovers which is perfect for a dip, a pasta sauce, or as an alternative, we used it with our pesto potatoes.
Secondly, make the salad. So easy to steam your chicken and potatoes in your thermo mixer, and blitz up the chicken afterwards. The dressing is delicious too!
This salad a great warm (Bec’s preference) or cold (Joe’s preference). It’s perfect for a simple midweek meal, yet impressive enough for entertaining. We really think you’re going to love it.
Recipe 3 – Crunchy Carrot Beetroot Salad with Orange, Feta and Mint (from The 4 Blades)
This Thermomix salad puts Bec’s favourite things into one dish. Exactly as the name implies, carrots, beetroot, orange, feta and mint. Yum! Crunchy, fresh and delicious! It forms it’s own delicious dressing too! Subscribers of the magazine may recognise it from The Made in 30 Issue. This only takes 10 minutes to make!
