This Quick Thermomix Pad Thai was originally featured in The 4 Blades Podcast Episode 76: Thermomix Thai Recipes, along with some fabulous Thai curries from Nikalene of Skinnymixers.
Bec wanted to call it ‘Quick Un-Authentic Thermomix Pad Thai’. Joe said no.
What makes it un-authentic? Well, it doesn’t have sugar, as pad thai usually does. Also, the vegetables are chopped up in the Thermomix, rather than left in matchstick form. The great news is that this Thermomix Pad Thai has good-for-you ingredients, it really goes a long way (feeding a crowd) and it doesn’t cost the earth. In fact, we chose to feature it in The Budget Issue of our digital magazine, as it’s such a cost effective meal.

Description
This tasty Thai noodle dish is so flavoursome and full of good ingredients. If it’s a regular at your house (especially if you are paying for takeaway!) it’s worth investing in the base ingredients so that you can make it time and time again with minimal outlay. Other ideas to make this dish cheaper include freezing your herbs and chillies, and buying packs of noodles whilst on sale. This dish is easily made vegetarian by omitting the chicken. You can add strips of tofu if you prefer. Scroll down beneath the recipe for the breakdown of costs.

Ingredients
- fresh coriander – 30g, or from frozen
- carrot – 120g, roughly chopped
- capsicum – 120g, roughly chopped
- rice noodles – 200g, thick, dried
- garlic cloves – 2, peeled
- chilli – 1, red, large (or alter chilli choice to your taste preference)
- spring onion – 1, white part only
- fish sauce – 30g
- tamarind purée – 30g
- peanut oil – 90g
- egg – 1
- chicken breast – 500g
- bean sprouts – 1 handful, mung, washed
- lime – 1, halved, juice only, optional (can use bottled lime juice)
- peanuts – 1 handful, roasted, unsalted, or cashews, roughly chopped, optional
- fresh coriander – extra, to garnish
- nuts of choice – extra, to garnish
Instructions
- Add coriander (30g) to the bowl. Chop Speed 7 / 1 second.
- Add carrot (120g) and capsicum (120g) to the bowl. Chop Speed 7 / 1 second. Set vegetables aside.
- Boil kettle of water. Pour the kettle over the rice noodles sitting in the insulated server. Set a timer for 10 minutes. Drain the noodles after this time.
- Add garlic (2 cloves), chilli (1) and shallot (1) to the bowl. Chop Speed 7 / 1 second. Scrape down the sides.
- Add fish sauce (30g), tamarind paste (30g) and peanut oil (30g) to the bowl. Mix Speed 6 / 5 seconds.
- Program 2 minutes / 90C / Speed 3.
- Heat remaining peanut oil in a large frypan on the stove.
- Add egg (1) to the bowl. Combine Speed 3 / 5 seconds.
- Add chicken strips (500g) and half the sauce mixture to the heated frypan on the stove. Cook the chicken through.
- Add the drained noodles, chopped vegetables, bean sprouts, remaining mixture and peanuts to the frypan. Mix thoroughly.
- Squeeze lime over the top and garnish with some fresh coriander leaves and extra peanuts. Season with salt if preferred.

What brand of fish sauce do you use? I found the fish sauce very overpowering while preparing the dish and found it a little hard to enjoy as I kept thinking of the fish sauce smell when I was eating it.
I just used the Woolworths select brand. Didn’t find that one overpowering at all. Maybe try a different brand.
We used an Asian brand… I don’t have it on me right at the minute. Just wondering, could your scales be out a bit?
Did you know that fish sauce is not vegetarian? So to make it vegetarian/vegan this needs to be omitted too. I know some people say “oh but some vegetarians eat fish” no… Those people are not vegetarian lol.

This was inedible for us. It’s a perfect example of ‘never read the comments’ for me. I was gagging while it was cooking because of the stench of the fish sauce and the smell was no better eating it. The dish was incredibly flavourless, despite the strong odour. I wasted $20 of ingredients plus $60 for the subsequent takeaway. I suspect you wont publish my review. I suspect there are many poor reviews not published. How can anyone eat this!
Hi Rebecca! Thanks for taking the time to let us know it hasn’t worked out for you. We completely hear you that fish sauce can be potent – we once had a bottle of it leak in our car… ew! Alas, we haven’t noticed the smell in this recipe. I wonder if your scales are off? It should have only been 1.5 Tbsp in total, which isn’t enough to cause a stink. That being said, everyone has different sensitivities I suppose. We actually do publish our recipe reviews, I guess we just haven’t had anyone who has felt like you, or perhaps they just go by the old Bambi philosophy of ‘If you can’t say something nice, don’t say nothing at all’ (an old favourite of my Mum’s… it used to drive me nuts!) Very nice and easy, we eat lots of Asian so we had everything in the cupboard, or could get at the local supermarket without needing a trip to a specialist shop, which was handy. One thing, the noodles were completely mushy…I got the packet out of the bin, the directions said to boil 6-8 minutes, so I will reduce the soaking time next time. Thet were Erawin Pad Thai from Woolies.

Gave it a go yesterday and found it a bit bland – added some extra tamarind paste on top and that made it a lot better. Thanks for the recipe but I think this one was not for us.
We used the vegan variation and I used my home-made vegan fish sauce (based on seaweed). Also used thin rice noodles rather than thick.

I made this tonight after reading many rave reviews. I wouldn’t say it’s as good as a traditional pad thai, but given that it’s meant to be a quick thermie version, it achieved this and the taste was pretty good. This is definitely a recipe I will make it again since it was so quick and yum. After reading other comments I added a tablespoon of sugar when making the sauce and used olive oil instead of peanut as that’s what I had.

I’ve heard so many great reviews about this recipe that I had to try it. Sadly I was really disappointed, actually let me rephrase that….. I eat everything so I was happy to eat it but my children were so unhappy (one cried lol) Normally I would free style this kind of thing in a wok. For us I think the missing ingredient was the sugar, I did notice other comments (after the disaster dinner) about the lack of sugar, perhaps you could add it in the ingredients list as an additional option for those not following a low sugar diet? Just a thought. Personally I don’t really see pad Thai as a Thermomix recipe, in future I’ll leave it for 100 wok cooking. Also didn’t like the blitzed veggies, it’s worth the extra 60 seconds to cut veg into batons.

We didn’t add sugar because we don’t eat sugar, but obviously anyone can add it in, which is why we mention it (and it’s great that people leave comments to prompt this as an option too). My son can’t eat peanuts as he’s allergic, would substituting the peanuts for cashews work or would the flavours not be right?

Made this tonight and found it very unbalanced without the sugar… i have lived in Thailand and palm sugar is an important balancer in their cooking, without it there was sour salty and a little spicey and absolutely no sweet. Next time I’ll be adding palm sugar as it is very much needed. While I recognize that you dont eat sugar, im afraid you’re doing yourself a disservice as many people will make this as the first of your recipes, be dissapointed and not try anymore. I would add the sugar as an option in the ingredients listing…

Thanks for the feedback. We really try to keep all of our recipes low in sugar or without sugar. It does depend on what your pallette is used to as well. We’ve had this recipe tested by heaps of people and have had really good feedback. If you’re after a super traditional pad thai this may not be the best option. This is designed to be a quick and healthy option that rivals the real thing.

Loved this recipe! I usually like one pots and was hesitant that there was a fry pan component but this is so quick and easy! Made it after the gym easily all done in 25mins! I added 30g brown sugar thought the flavours were awesome!

I kind of winged it, cooked the chicken first then did the sauce while it was cooking. I added extra chicken so I made 1.5 times the amount of sauce. I also added two eggs. I did three quarters of a red capsicum and two carrots, cooked the noodles in between . Added a few squirts of lime juice at the end. It pleased me and it certainly pleased my hard to please husband, winner in our house! Adding to my recipe folder. Thank you.

Have been meaning to make this for ages, I’m angry I waited so long, because we could have enjoyed this so many times!
I went a little easy on the coriander (hubby isn’t the biggest fan), and had to omit the garlic & spring onion due to allergies, but this was still super tasty! My hubby went back for seconds, and my 5 & 1.5year old girls wolfed it down.

another fan here! i halved the coriander and fish sauce as i my 9 month old and 2.5 yr old were also eating it and omitted the chilli (added it on top for hubby and i!)
also i only had tamarind puree and not paste as well so i chucked a dash of soy in the sauce too.

This was absolutely delicious! I made this more so for me! But suprisingly my husband and 18 month old LOVED it! They usually don’t like this type of food. So thank you! Delicious, quick, easy and healthy. All round love. Different to the traditional Pad Thai but still so yummy!

The dish turned to a disaster, l was so disappointed… Than l searched for other websites and l was wondering what’s the difference.
I realised you have no sugar added comparing to other ones, so l added 50 gr of raw sugar and than was devine, this is so crucial for this recipe otherwise doesn’t taste nice at all!!

I tried this once before and have been craving it ever since!! I used less chicken and added prawns and tofu to the mix and it was absolutely amazing!!! I love that it has no sugar it tastes fresh and i dont feel sluggish after eating it.. thanks for the awesome recipe! 🙂

Lovely quick dish. I added 30 gms coconut sugar to appeal to the kids taste buds, could probably get away with only 20 gms sugar. Will become a regular in our household.
