Irish Brown Bread

Irish Brown Bread has been a staple in Ireland for a long time. It dates back to a time when the wholemeal ‘brown’ flour was seen as the ‘poor’ flour, and the bread was part of the rations. There are many different recipes out there for Irish Brown Bread, but this very simple recipe (with only 5 ingredients!) has been shared with us by Bec’s friend Laura.

Laura and Bec met as they both had their babies around the same time. Laura, an Irish native, had never done much cooking but after her little girl came along she wanted to start making the traditional bread in the morning, using the recipe from back home. She has kindly shared her Irish Brown Bread recipe with us.

One of the great things about having a Thermomix is that you can make your own butter. If you are anything like us, you hate the idea of throwing out the buttermilk after making the butter… but simultaneously you don’t really know what you should make with it (apart from buttermilk pancakes, of course!) so you end up with a whole lot of frozen buttermilk. Well, buttermilk is one of the 5 simple ingredients in this recipe, so why not give it a go!

To answer some questions before they arise:

– No, it doesn’t need to be kneaded.
– Yes, the dough is quite sticky (use a little extra flour when you are shaping it)
– Yes, it really is that simple!

This recipe was featured in Episode 98 of the podcast: St Patrick’s Day Thermomix Recipes. It should be noted that the quantity of the buttermilk and the temperature of the oven have been updated since recording the podcast.

  • buttermilk – 500g
  • plain flour – 270g, wholemeal, plus extra for dusting
  • self raising flour – 270g, wholemeal
  • bicarb soda – 1 tsp
  • salt – 1/2 tsp


  1. Preheat oven to 160C. Sit a small jug on the top of your Thermomix lid and weigh the buttermilk (500g) into the jug. Set aside.
  2. Add plain wholemeal flour (270g), self raising wholemeal flour (270g), bicarb soda (1 tsp) and salt (1/2 tsp) to the bowl. Set to Speed 4.
  3. Gradually pour the buttermilk from the jug into the bowl whilst it continues mixing on Speed 4. Stop once you have added all the milk and the dough is quite sticky and well combined.
  4. Lay a piece of baking paper on a baking tray and dust it with some of the wholemeal plain flour. Transfer the dough from the bowl to the baking paper using a spatula.
  5. Using floured hands, pat the dough into a circular disc approximately 3cm thick. Mark a cross in the top of the disc.
  6. Transfer the tray to the oven and bake for 40 minutes. After 40 minutes, turn the bread over and bake for another 5 minutes.
  7. Remove from the oven and once cool enough to touch you can slice and enjoy warm.
