Ingredients
- butter – 60g, cubed
- honey – 140g
- vanilla bean paste – 1 tsp
- plain flour – 170g
- self raising flour – 65g
- bicarb soda – 1/2 tsp
Instructions
- Place butter (60g), honey (140g) and vanilla (1 tsp) into bowl. Program 5 minutes / 100C / Speed 2.
- Add plain flour (170g), self raising flour (65g) and bicarb soda (1/2 tsp) to the bowl. Combine Speed 3 / 30 seconds. This will be a sticky, wet dough. It will firm upon cooling, however.
- Remove dough from the bowl and place onto a silicone mat in a rectangle shape to cool for anywhere from 10 to 40 minutes. Be careful as this will be hot. Do not put it in the fridge or leave it too long, as it will become crumbly and be harder to work with.
- Preheat oven to 180C. Line two large baking trays with baking paper.
- Once dough is slightly cooled and easy to work with, roll out into a thin rectangle about 2mm in thickness. See Notes.
- If your dough is sticky, allow it to cool a little longer. You want dough that is able to be lifted from the surface it is being rolled on.
- Using a small teddy cutter, cut shapes from the dough. You may choose to cut and then place the teddy on the tray or you may choose to cut them all at once then peel away from the mat and put on the tray. See Notes.
- These will only need to bake for 5-8 minutes or so. Watch them very carefully. You want them golden with a crunch to them. If you do not cook long enough you may have less crunchy teddies on day two and beyond. Do not overcook though. Burnt honey is not tasty. Every oven varies, so watch closely.
Notes
- Dough can be frozen
- Store in an airtight glass jar for up to two weeks.
- When you roll out the dough, lift and flip it over a few times whilst rolling to ensure it is an even roll. Work gently and slowly when lifting and flipping.
- Don’t forget to re-roll out the cut dough and cut teddies from it. If your dough becomes dry, pop it into the microwave to warm and it will become flexible again. Microwaves vary, but start with 10-15 seconds and adjust as necessary.
