It is a BIG cake… it can be completely gluten free and dairy free… and it is delicious! It has what I believe to be all the best things in a carrot cake… carrot, pineapple, walnuts and cinnamon. I have to be honest, I think you’re going to love it too. You can of course do a traditional cream cheese icing, or even leave the cake plain, but I have converted a recipe which will allow you to have an icing while keeping the cake dairy-free. Ingredients
- carrot – 450g, cut in to chunks
- eggs – 4
- brown sugar – 250g
- olive oil – 130g
- golden syrup – 100g
- plain flour – 250g, gluten free
- bicarb soda – 1 tsp
- baking powder – 1.5 tsp
- cinnamon – 1/2 tsp
- pineapple – 120g tin, crushed, drained
- walnuts – 70g, roughly chopped (*can omit for NF version)
Icing:
- lemon – 1/2, peel only
- raw sugar – 250g
- dairy free spread – 50g
- pineapple – 2 tsp, crushed
- vanilla – 1 tsp, extract
- walnuts – broken up / chopped roughly (*can omit for NF version)
Instructions
Cake:
- Preheat oven to 160C and line square cake tin with baking paper.
- Grate carrots (450g), Speed 5-6 / 8 seconds (remove any big pieces remaining). Set aside.
- Add eggs (4) and brown sugar (250g). Speed 5 / 20 seconds.
- Add olive oil (130g) and golden syrup (100g). Speed 5 / 10 seconds.
- Add flour (250g), bicarb soda (1 tsp), baking powder (1.5 tsp) and ground cinnamon (1/2 tsp). Speed 5 / 10 seconds, push down sides, repeat Speed 5 / 10 seconds.
- Add grated carrot, tin of drained pineapple (120g), walnuts (70g). Reverse+Speed 4 / 10 seconds.
- Pour into the prepared tin.
- Cook for 45-60 minutes. Top should be golden, and skewer should come out clean. Allow to cool before icing.
Icing:
- Add lemon (1/2) to the bowl. Speed 7 / 20 seconds. Scrape down bowl.
- Add sugar (250g). Speed 10 / 10 seconds. Scrape down sides.
- Add non-dairy spread (50g). Speed 7 / 20 seconds. Scrape down sides.
- Add crushed pineapple (2 tsp), vanilla (1 tsp). Speed 7 /10 seconds.
- Insert whisk attachment. Program 3 minutes / Speed 3.
- Refrigerate until required.
- Decorate with walnuts.

Cake looks great any suggestions for egg free? 2 tsp chia 6 Tbl water & 1 banana?
Hi Nat, thanks for asking! I wouldn’t consider us the authority on egg free, unfortunately! I have had some success in the past with grinding flaxseeds and mixing with water. I think the conversion is 2.5 Tbsp ground flax seeds and 3 Tbsp water per egg… and that gives a bit more of a nutty texture, which I think MIGHT be good with this cake?

Can I substitute the pineapple with something else?
Hi Caroline! You could try just leaving it out. It’s an enormous cake and quite moist anyway, so I feel you should be fine.

Hi Chris! No, coconut flour works quite differently. It would be quite a different result. I’d have to play with it to see what the conversion would be.

Yep! You could halve it! It is a really big cake, so it would either make one large or two small loaves when halved. Let us know how you go!
hi what is golden syrup? what other substitutes can i use instead of golden syrup..tq
Hi Hema! You could use a honey, or liquid sweetener, however Golden Syrup has a deeper flavour.

OMG. Thank you, thank you, thank you. This cake is fabulous! I made it for my hubby’s birthday and he LOVED it (as did everyone else!) I didn’t have a square tin so used a big round tin. What size is the square tin you use? I want to buy one as it will cut into slices easier then.

This was an absolutely beautiful cake, ligh and moist and huge!!!! I used square tin which is easier for lunch box cutting. Would highly recommend, I don’t bake a lot, more of a savoury cook, but will make again and again

Absolutely! In fact you can omit it completely, you just may find it doesn’t take as long to cook.

I made this for a work colleague’s birthday this week as we have gluten and lactose intolerant people in our group. Everyone commented on how light and fluffy it was (they are used to dense GF cakes) I had a square cake tin which didn’t quite hold the whole mixture so I made 4 muffins with it as well!!
I only got my thermomix a week ago and I have been dying to try some of your recipes and I have yet to be disappointed- thanks so much!!

This is a wonderful recipe. It made 20 muffins! I used plain flour and subbed sunflower seeds for the walnuts.
