Description

Thank goodness for Episode 140 of the podcast, we say! Because of the theme of that episode (Quick Biscuits) we were prompted to create these banana bread bickies that have for SURE become a new family favourite. They feel completely decadent, but truthfully… they are really quite healthy!

We have used cacao nibs instead of sweet chocolate chips for this recipe. They give the texture of “Hey there’s some chocolate in here!” without the sugar. We love that. You can use choc chips or just omit if you prefer.

No linseeds? We’ve actually tried these without linseeds as well and they are still delicious… just a little softer. So don’t let the lack of ‘fancy ingredients’ like linseeds and cacao nibs stop you my friend!

They are quick, easy (especially in your Thermomix!), delicious AND healthy. You don’t even need to add extra sweetener if you don’t want to!

Ingredients

  • linseeds – 10g
  • almonds – 200g
  • cinnamon – 1 tsp
  • xylitol – 30g, or other sweetener
  • banana – 1, overripe
  • coconut oil – 60g, or butter
  • vanilla – 2 tsp, extract
  • egg – 1
  • cacao nibs – 30g, you could use choc chips or carob if you prefer

Instructions

  1. Preheat oven to 180C and line a baking tray with baking paper.
  2. Place linseeds (10g) in the bowl. Blitz Speed 10 / 30 seconds.
  3. Place almonds (200g), cinnamon (1 tsp) and sweetener (30g) into the bowl. Blitz Speed 8 / 10 seconds. Note: you can reduce sweetener if you have a particularly overripe banana.
  4. Add the overripe banana (1), coconut oil (60g), vanilla extract (2 tsp), egg (1) and cacao nibs (30g) in bowl. Process Speed 5 / 6 seconds.
  5. Spoon out tablespoons of biscuit dough onto the baking tray with baking paper. You will likely get 12-16, depending on size.
  6. Bake for about 13 minutes. You want them to be golden brown. Remove them from the oven and allow them to cool and firm slightly.
